Crock Pot Scalloped Potatoes

Serves: 6-8
  • 3 tablespoons unsalted butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 1 and ½ cups milk
  • 1 and ½ cups shredded cheese, I used cheddar
  • 7-8 medium potatoes, sliced into thin slices
  1. Add butter, salt, and pepper in a medium pot cooking on medium-heat. Once the butter has melted, whisk in the flour until there are no clumps. Gradually add in the milk, whisking over medium-heat until the sauce has thickened and become bubbly. Add 1 cup of shredded cheese and whisk until the cheese has melted.
  2. Spray your 5-quart or larger slow cooker with non-stick cooking spray. Layer half of the sliced potatoes evenly on the bottom. Pour half of the cheese sauce over the potatoes. Repeat with remaining potatoes and cheese sauce.
  3. Sprinkle the remaining ½ cup of shredded cheese on top of the layers. Cook on low for 7-8 hours or on high for 4-5 hours.
