Mouthwatering crock pot mexican chicken burrito recipe that is so easy to put together and absolutely delicious. Very filling as well!
I have always loved burritos and any kind of burritos. Chicken, steak, vegetarian, Mexican, Asian – you name it..and I love it. Not only are they delicious, but they are so easy to put together at home.
Forget the take out burritos – ahem…Chipotle. I am a huge fan of Chipotle, but not a huge fan of the price. You really do get a fat burrito, but it’s still a lot to pay to me. I can make a fat burrito at home for the fraction of the price.
Does this one taste like Chipotle? Nope. It’s a Mexican themed burrito, though. Trust me, you’ll love it!
Remember the post where I showed you how you can easily cook and shred chicken in your slow cooker/crock-pot? Here it is again – How to: Easy Slow Cooker Shredded Chicken. From four chicken breasts, I made that much shredded chicken.
The best part – I only used half of the shredded chicken, so that means 2 chicken breasts and it feeds an army. Maybe not a full army, but a bunch of very hungry guys for a couple of days. HA!
For this you will need at least 2 chicken breasts. You do not have to have them precooked, but if you have any precooked that fine as well.
You will also need 2 cans of pinto beans, if you have dry pinto beans – follow this on how to cook dried beans in the slow cooker. If you do not have them already cooked, then that is okay as well.
You will just need to add in extra water with the rest of the ingredients – start with 1/2 cup and see how that goes.
You will also need one and a half jars of salsa – you can use any kind that you would like. And for the burrito part, you will need tortillas and any kind of toppings that you prefer – I used salsa and shredded cheddar cheese. Mmmm.
- 2 chicken breasts
- 2 cans of pinto beans (15 ounce cans)
- 1 and half jars of salsa
- 1 packet of taco seasoning
- tortillas, to serve
- salsa, to serve
- Add your chicken breasts (not frozen, thawed) into your slow cooker/crock pot, then add in the beans, salsa, and taco seasoning.
- Mix everything together. Cook on low for 8 hours or on high for 4 hours.
- Serve with tortillas and salsa.
